This week I want to highlight the special high-quality nutrients in peas. Peas not only have high protein content, but also, contain many vitamins (B vitamins; niacin, thiamine and folic acid, Vitamin K and Vitamin C) and minerals (phosphorus, iron, manganese, and magnesium). Plus…they are green! That means they have phytonutrients and antioxidants too!
Oliver’s is serving Peas and Carrots on Monday! Carrots are famous for their Vitamin A content but also contain Vitamin C, and pyridoxine. This flavorful combination is a perfect match!
