Bitters are better! Cultures that consume more bitter tasting foods in their diet on a regular basis, have fewer digestive issues and reduced risks for several diseases (diabetes, kidney, and liver disease) and scientist are working hard to find out why.
What are bitters? Bitters can be seasonings, fruits, vegetables and drinks like teas and black coffee. Here is what they have found out so far: It starts in the mouth. Bitters cause an increase production of saliva which improves chewing and the exposure of nutrients in food. Then, in the stomach, they stimulate gastric juice production which improves protein digestion, mineral absorption and the breakdown of fats and fat-soluble vitamins A, D, E, K. Plus, they reduce gas and bloating!
Broccoli, cauliflower, Brussel’s sprouts, and kale are at the top of most bitter foods’ lists.
